· Terms: The origin of the grape is in the surroundings of the town of Masdache, Lanzarote, province of Las Palmas, within the D.O. Lanzarote.
• Strains: 100% Malvasía, a native variety of the area.
• Elaboration: Manual harvest in boxes close to 18 Kg., with manual selection on the belt. The clusters have been previously cooled to 5ºC in the boxes themselves, in order to achieve an overpressure in the grape cells that gives rise to a much greater aromatic release, prior to maceration and subsequent pressing before settling. Subsequently, the wine is pressed and the free run juice is separated from the press juice by organoleptic quality. After fermentation, at a controlled temperature of around 15 degrees, the wine is aged on its lees.
• Pairing: Perfect with fish, shellfish, rice dishes, etc. and even to take as an aperitif.
